Lent = Food Porn

Oh yes. While I am not practicing Catholic in any way shape or form, I do try to give something up for Lent when it comes around.

This year, I have decided to really test my will power and give up cheese. Beautiful, tasty, awesomely delicious in any form cheese. It is probably going to kill me, but it is all in the name of self sacrifice, right?

So, in an effort to stymie my cheese cravings that started 6 hours into day one, I am looking for truly healthy, mouth watering dishes that don’t contain the ooey gooeyness of cheese. And thanks so Jade, I hit awesome recipe pay dirt with Smitten Kitchen.

I need to say that my savory culinary skills are definitely below par. I mean, why cook not so good food when you have a live-in Boyfriend who went to culinary school, right? Right. Hey, but throw me in any baking situation, and I will knock your socks off!

Anyway, back to what I was talking about. After perusing several pages of the Smitten Kitchen website, I assembles a few recipes that I wanted to try out. They all looked pretty full proof, but I went with the simplest one anyway… kind of as a tester run. HAHA. This is was I made:

Warm Butternut and Chickpea Salad with Tahini Dressing

It was freaking amazing. So tasty and filling and healthy. I did tweak the receipea bit, but not much. I salted and peppered the squash before putting in the oven. I also added bacon. I know, I know; but it was only 4 slices… which equals about 1 slice per serving – and hey, I am giving up cheese, not bacon. I love bacon waayyy to much. HAHA. The bacon didn’t add a whole lot though, so I might just skip it next time. the Boyfriend also added sage, which brought the dish to a whole new level. I was like “wow”. And he was like “I know”.

ME: “So, how do you like it, babe?”

HIM: “I must say, when you cook, it is either hit or miss, but man! This is really good!”

ME: “er, thanks?”

Did he just call me a bad cook? I think so!

And can I tell you how much I lovetahini? Man, it’s good.

Anyway, I will for sure be making this again. It was super easy and beyond satisfying. Epic.

    That salad looks amazing. I always intend to give up something for Lent but end up forgetting the date it starts on and messing up the very beginning!

    that’s pretty sweet you give something up like that 🙂 i’m actually Catholic myself, and just NOW found what i’ll be giving up! Complaining! haha…and every time i catch myself, or someone else catches me, i’ll owe a jar $1.00 and will then give the jar away to church at the end 🙂 cuz i KNOW i’ll slip, but i’ll be doing my best not too……(i stole this idea from another blogger. hooray!)
